Article from Good Housekeeping April 2006
We invited our panel to nominate their favourite food hero and to spend five minutes convincing the other members why their candidate should win. A heated debate ensued before the decision was put to the vote... But there was one clear winner: Favourite
food hero Claire Symington of Seldom Seen Farm, Leicestershire 'Claire is a champion
of the traditional approach to farming,' says Moyra Fraser, who nominated
her. 'After starting with just six geese, she now has a flock of 4,000,
all totally free range. Claire has also created an easy-to-slice,
three-bird roast - a boned goose stuffed with a boned chicken stuffed
with a boned pheasant, all coated in home-made port and orange stuffing.
She runs a fabulous seasonal farm shop and mail-order business, too,
stocking home-made cakes, chutneys and lots more. The quality of the
produce from Seldom Seen Farm is renowned, and Claire is a brilliant
example of a woman who's making a real difference in farming.'
